Potato Salad recipe

This is one of my fave dishes for the summer and so quick to make

So, a few things about me:

1) I hate waste
2) I like saving time
3) I prioritise my healthy eating and am always looking on ways to make it easier and simpler

This recipe all of those and the added bonus is that it’s really tasty, really healthy and so simple to make.

Ingredients

Essential elements

  • Boiled potatoes – now this is the first of my top tips!  If you are having new potatoes for dinner, cook extra on purpose – I always cook double what we need for dinner as 1) it saves cost spent on gas and 2) there are so many things you can do with leftover potatoes!
  •  Natural fat free yoghurt
  • Seasoning (I use a pinch of mustard powder and black pepper but you can add any seasoning you like.

Make it your own elements

You can add anything you fancy or have in to a potato salad – there’s no rules!  This time, I added in the following:

  • chopped red onion
  • chopped radishes
  • sliced gherkins
  • leftover roasted cauliflower (not pictured as I found it in the fridge and chucked it in at the end)
I’ve previously added chopped peppers, broccoli and diced carrot – get experimental and it’s a great way to use up things in your fridge.
  • Chop your boiled potatoes into bite size pieces
  • Chop all the veg you are using and add to the bowl
  • Add the natural fat free yoghurt one spoon at a time and give it a good mix. 
  • Add it gradually until you get the right coverage 
  • Add in any seasoning you are using and give a final good stir
  • Serve!
  • I made enough for several meals so I just added some green salad and some protein (this was a pre-cooked salmon fillet that I’d cooked the night before when the oven was on for dinner)
