Cook the perfect jacket spud in 20 mins

Like most people, I'm definitely keeping an eye on my bills at the moment and looking for ways to save money and cut back where possible and this is a great tip to cook the perfect jacket potato with minimum time in the oven needed.

Jacket potatoes are one of my favourite quick, easy and filling meals and now, as Autumn is upon us, I’ll definitely be relying on them more for lunches and dinners.  

I often just stick my potatoes in the microwave but for the perfect jacket spud, you definitely need a crispy skin which the microwave just can’t deliver.

One of the ways I’m looking to cut back on costs is how much I use my oven and sticking a couple of jacket potatoes in the oven for upwards of an hour just isn’t something I want to do right now.  So, here’s my top tip on cutting back the cooking time without losing that lovely crispy skin!

I used a medium sized potato (perfect size for a lunch) – you may need to adjust microwave time if you are using a bigger spud or doing more than one at once.

Place on a microwaveable plate and cook on high for 7 mins

Turn half way through

Remove from microwave and then insert a metal skewer right through the middle of the potato 

Your potato will be part cooked, by inserting the metal skewer, you will speed up the cooking process from the inside of the potato

Place the skewered potato on a raised wire rack and put in a pre-heated oven at 200°C / gas mark 6 for 10-15 minutes turning half way through.

 

Remove carefully from the oven – the skewer will be scorching hot

Slide the potato off the skewer

Slice and enjoy!

And voila - you have a perfect jacket spud.
Light and fluffy on the inside
Nice and crispy skin on the outside

As I mentioned above, jacket potatoes are one of my favourite quick and easy meals – they are cheap too and cooking them this way, ensures you are using minimum gas / electric too to help cut those energy bills as well.
