Breakfast recipe
I do have to say that breakfast is my favourite meal of the day, but I do often get stuck in a bit of a rut eating the same thing over and over so I’m always on the look out for new ideas as well as ones that I can either prepare in advance or don’t take a lot of time to prepare. Bircher muesli is one of those fab breakfasts that you can prepare in advance when you’ve got a bit of time as well as you can make up a batch of it to last several days (as long as you keep it refrigerated).
History
I love a good fact and did you know that bircher muesli was invented in Switzerland in 1900 by Dr Maximillian Bircher-Brenner, he gave it to his patients at the start of every meal as focusing on nutrition and fruits and vegetables was a key part of his therapy.
There are lots of recipes out there and the beauty of this dish is that you can get experimental and add lots of different ingredients according to your taste (or what you’ve got in!). In this blog post, I’ll share how I made my last version (it differs every single time!).
Ingredients (to make 2 portions)
80g of plain porridge oats
1 tin of fruit in its own juice (I used pears)
1 apple (grated)
3 large dollops of natural fat free yoghurt
2 tablespoons of mixed seeds

Method
Place the oats in a large bowl
Add the juice of the tinned fruit

Add the mixed seeds
(you can omit this or add dried fruit or nuts)

Add the natural fat free yoghurt and stir
Add more or less depending on your taste

Grate your apple
(watch your fingers!)

Add the grated apple to the oats mix
give it another good stir

Uou can add more yoghurt at this point if its too thick for you (it will thicken up in the fridge overnight)

Cover with clingfilm and place in the fridge overnight.
If you are making multiple days in one go, you can leave this bowl covered in the fridge for 3 days.

To serve:Chop up 2 of the tinned pears (or fruit of your choice), chop or slice an apple and add blueberries.
You can add any fruit of your choice to the top

I sprinkle mine with some cinnamon to serve, hubby doesn’t like cinnamon so he just has his at it comes.
You can also add chopped nuts or a tsp of honey to serve.
