Make your own onion bhajis

Onion bhajis are an integral part of any good Indian meal but for those of us on a healthy eating or weight loss journey, the fact that they are traditionally deep fried means they are probably off the menu most of the time.  We love a good curry at home and this recipe to make your own onion bhajis means you can have all of the flavour and enjoyment of this delicious side dish in a much healthier way.  

Ingredients

  • A large red onion (you can use white ones if you prefer)
  • A large carrot
  • A sweet potato
  • One large egg or two medium 
  • 1 tsp of cumin
  • 1 tsp of coriander
  • 1 tbsp of curry powder
  • low calorie spray oil
Pre-heat your oven to 180 / Gas Mark 4

Method

Thinly slice your onion, I then chop the slices in half

Add it to a large mixing bowl

Use your cheese grater to grate the carrot, add to the mixing bowl

Use the cheese grater to grate the sweet potato and add to the mixing bowl

Add your spices and eggs to the bowl

Give it all a good stir to combine the eggs and spices and mix evenly through the vegetables

Cooking method 1

Spray a silicone mould with low calorie spray oil

Use a spoon to add large dollops of the mixture and flatten down.

Cooking method 2

Line a baking tray with baking paper and place large dollops of the mixture onto the paper, flatten and roughly shape with a spoon.

To cook

Place in the pre-heated oven.

The ones on the baking paper cook a lot quicker than the ones in the silicone mould and only need about 15 minutes to cook through and crisp up.  

The ones in the mould took a bit longer – about 25 minutes.

The ones in the silicone mould are a lot softer than the baking paper ones and a bit more ‘cake’ like.
Hubby much prefers the flatter ones cooked on the baking paper – I like both so give them a try to find your favourites.

They keep in the fridge for 3 days so you can cook up as many as you wish and serve with your Indian fakeaway for dinner and enjoy as snacks over the next couple of days.

I made a lamb and pumpkin biryani for dinner (plus lots for leftovers) and served the onion bhajis as a side dish with a homemade dip which was natural fat free yoghurt with a tablespoon of mango chutney stirred through.

Absolutely delicious!
