Having lunch ideas which are cheap, take minimal time to prepare and cook plus are a hit with the whole family is really important and this is something that really does feel like a treat.
You can tailor your toppings in exactly the same way you would a normal pizza and use up things you've got in to keep the costs down.
Ingredients
Bread – I use gluten free bread for myself and a standard seeded wholemeal bread for the hubby – 2 slices per person
Tomato puree – 2 tbsp
1/2 tsp of mixed herbs (you can add whatever herbs and spices you like)
Grated cheese – 40g per portion (to cover 2 slices of bread)
Toppings For this version, I just used sliced onion, mushrooms and peppers as it was towards the end of the shopping week and we didn’t have much in but I’ve also added chopped aubergine, sliced veggie sausages, tuna to previous versions.
Step One
Toast your bread as normal.
Step Two
Slice up your toppings and prepare any other toppings you are using (eg cook your veggie sausages or meat if you are using)
Step Three
I lightly fry off my vegetables in a splash of water for about 10 minutes to soften.
Step Four
Add the tomato puree, mixed herbs and a splash of water and give it a really good stir.
Step Five
The cooked veggies will look something like this.
Step Six
Pre-heat your grill and place your toasted bread on your grill tray. I always cover with tinfoil to save cleaning!
Step Seven
Spread over your topping in an even layer – try to cover right to the corners to save the bread from burning.
Step Eight
Sprinkle over your grated cheese.
Step Nine
Place under the grill for a couple of minutes until the cheese has melted.
Step Ten
The finished article!
To Serve
Simply enjoy as it is – you could serve with chips and salad to make a more filling meal!
