Festive pancakes

As soon as December hits, I purchase my first jar of sweet mincemeat and start adding it to all sorts of dishes - one tablespoon goes a long way and you can add that mince pie flavour to all sorts of breakfasts and desserts.

In one of my live sessions in my free Facebook weight loss support group a couple of weeks ago, we were sharing different breakfast ideas and one of the members mentioned she’d made some oaty pancakes for breakfast that day and right away, I added them to my meal plan and to make them with a Christmas twist!  I hope you enjoy

Christmas Oaty Pancakes

Ingredients (makes 1 portion - or 4 pancakes)

  • 40g of plain porridge oats
  • 1 large egg or 2 small ones
  • A heaped tablespoon of either quark, natural fat free yoghurt or a fat free flavoured yoghurt of your choice
  • 1 tsp of sweetener or you can use a few drops of a sugar free syrup – you can omit this if you like or add a tsp of honey to sweeten
  • 1 level tablespoon of sweet mincemeat
  • a sprinkle of cinnamon 

To serve

  •  a satsuma
  • sweetened quark or fat free yoghurt of your choice

Method

Add the porridge oats, egg, cinnamon and quark or yoghurt to a bowl and mix well

The mixture should be quite running (so it falls off the spoon easily)

Stir through the level tablespoon of mincemat

Spray a cold frying pan with low calorie spray oil and place on a low heat

Add dollops of your pancake mixture to the pan.  I use a fried egg silicone mould to make nice circles but you don’t have to do this step.

Cook for about 5 minutes until the base has firmed up and use a fish slice to carefully turn them over and cook for another 5 minutes.

To Serve

I topped mine with quark sweetened with a tsp of sweetener and a satsuma though you can top with whatever fruit you like and a fat free flavoured yoghurt.

They are delicious hot or cold – I made 4 from this mixture, had 3 for breakfast and saved one for dessert after dinner. You could make up a double batch too and save for another breakfast later in the week – just allow them to cool down and then wrap in foil and keep in the fridge.

Health Benefits of Oats

  1. High in fibre – particularly a soluble fibre called beta-glucan which can help to lower cholesterol and balance blood sugar levels
  2. High in prebiotic fibres which are important for gut health and help to minimise inflammation
  3. Good source of protective antioxidants
  4. They are a complex carbohydrate which means they are a slow-releasing energy food which is a great way to start the day and release energy throughout the morning
  5. The high fibre content also keeps you feeling fuller for longer
Recent studies also show that eating wholegrains such as porridge oats daily has links to reducing the risk of heart disease, obesity and Type 2 diabetes.

  1. I love mincemeat porridge at this time of year. I use 40g oats, grated carrot, 1 level tablespoon mincemeat & 1/2 level tsp gnd ginger then cover with boiling water to soak overnight. In the morning I cook in the microwave usually adding more water. When nearly ready, I add in chopped apple and 2 satsumas just to soften. Absolutely scrumptious x

    1. I love that too – I also add in a bit of grated carrot as well! I don’t add the apple though so may well give that a go next time!
