Peanut butter cookies

Whip up a batch of low fat and low sugar cookies with just 3 ingredients and done in 20 minutes!

Biscuits and cookies are something I know I have to be careful about.  An open packet of biscuits in the kitchen just calls my name from the second it gets opened and I know myself well enough that I’d never be able to stop at just the one so we simply don’t buy them anymore and I don’t put that temptation in my own path.  However, there are times when a cuppa with a cookie or biscuit just sounds absolutely delightful so this recipe is something that I can make in 20 minutes, its low in fat and sugar and they are really tasty but I don’t have the same tendency to overeat.

If you’re not a fan of peanut butter, you can simply adapt the recipe to make a different flavoured version and there are a few ideas below

Ingredients

This makes 3 large cookies or 6 small ones

  • 40 g of Post grape nuts cereal (you can get this in all major supermarkets
  • 1 large egg
  • 10g of peanut butter powder (there are lots of options available to buy, I get mine from Amazon but you can also find it in Holland & Barrett, some large supermarkets – check out the hot chocolate aisle.)

Method

Step 1

Measure out 40g of grape nuts cereal

Step 2

Add the egg and the peanut butter powder and mix well

Step 3

I use my fried egg silicone mould to make nice round cookies but you can just dollops about 1/2cm thick

Step 4

Just place your mixture directly onto a baking tray lined with baking paper

Step 5

Bake in the oven for 10 minutes on 180°C / gas mark 4 or until golden brown. 

Other variations

Using the grape nuts cereal and the egg as your base mixture, you can make different variants of these and a few I’ve tried are:

  • Chocolate cookies – add 10g of a low fat hot chocolate powder
  • Lemon cookies – add 1 tablespoon of sweetener and lemon zest
  • Ginger cookies – add 1 tablespoon of sweetener and a half of tsp of ginger powder
  • Cinnamon and raisin cookies – add 15g of raisins and 1/2 tsp of ground cinnamon
The grape nuts give the cookies a bit of a crunch which I really enjoy.  If you can’t get hold of grape nuts cereal, you can make cookies with plain porridge oats though they tend to be a bit more cakey rather than biscuity!
