Fancy pancakes for breakfast?

This is currently one of my favourite weekend breakfasts as although it's a really simple and easy recipe to follow, it takes a bit more time than I usually have on weekdays.

I’ve written about my love for the sweet potato in a previous blog as well as all of the amazing health benefits this lovely orange vegetable contains.  It’s incredibly versatile and I use it in all sorts of ways but one of my current favourites is in pancake form!

Ingredients

This is to make approximately 10 pancakes (depending on the size of your pancake)

  •  600g of sweet potato, peeled and chopped into bitesize chucks
  • 2 medium eggs
  • 1/2 tsp of ground cinnamon 

Method

Step 1

Place the peeled and chopped sweet potato chunks into your vegetable steamer

Step 2

Cover and steam for about 15 minutes or until soft

Step 3

Turn off the heat, remove the lid and allow to cook for about 10 mins

Step 4

Once the potato has cooled a bit, mash using a potato masher (it doesn’t have to be perfectly smooth)

Step 5

Add the cinnamon powder and the eggs.  I add one egg at a time and give it a good mix to check the consistency.  It should be quite ‘sloppy’ (I hate that word) but not runny so if you’ve got large eggs, you may only need one.

Step 6

Spray a large non-stick frying pan with low calorie spray oil (top tip, spray it cold and then heat gently rather than spraying it onto a hot pan)

Step 7

Add dollops of your sweet potato batter into the pan.  I use my fried egg silicone mould but that’s not necessary.  Flatten the pancakes with the back of a spoon

Step 8

Leave to cook gently for about 5 minutes before carefully turning over.  It may take a bit longer so be patient

Step 9

Cook on the other side for another 5 minutes and set aside.  Repeat with the rest of your mixture.

Serving Suggestions

These are delicious hot or cold so I always make at least 2 or 3 portions.  I serve some warm for breakfast and they are absolutely delicious with berries of any kind and I add either a tsp of maple syrup or a Sweet Freedom syrup.  They are really tasty with a dollop of fat free yoghurt and fruit of your choice too.

Once they are cooled, I keep them wrapped in tinfoil in the fridge and they are fine for 2 days.  I eat them cold as a snack or reheat for 1 minute in the microwave.
